🥕 This recipe is straightforward, nourishing, and a breeze to clean up!

I created the most perfect banana oatmeal pancakes back in 2019, and they quickly became a staple on my site. The batter for these perfectly fluffy pancakes gets made right in your blender! Yes, you will literalmente add all the ingredients and blend until smooth. This recipe has been modified slightly from its original appearance in my cookbook to emphasize its amazing texture. Since there is no flour, no butter, and no added sugar, these pancakes are suitable for babies, toddlers, and kiddos alike. I always keep them in my freezer for easy weekday breakfasts!

🛒 Ingredients You’ll Need

  • 🍌 Ripe Bananas (the more brown spots, the better the sweetness!)
  • 🥚 Eggs (you’ll need 2 large eggs)
  • 🥛 Unsweetened Almond Milk (or any milk you prefer)
  • 🌾 Rolled Oats (regular or certified gluten-free)
  • Baking Powder (this is key for that fluffiness!)
  • 🧂 Cinnamon, Vanilla Extract, & Salt (essential for flavor)

👩‍🍳 Step-by-Step Instructions

1
Blend the Batter: Yes, you’ll literally add all of the ingredients to a blender, and blend on high until completely smooth!
2
Let it Rest: You’ll want to let the batter sit in your blender for about 2 minutes while you heat up your pan or griddle. This helps the oats hydrate!
3
Cook & Flip: Heat oil (olive or coconut) on your pan over medium heat. Add batter 1/3 cup at a time. Cook 2-3 minutes until golden brown and tiny bubbles appear on the edges. Flip and cook 2 minutes more.
4
Serve & Devour: Serve immediately with your favorite toppings, such as peanut butter, maple syrup, and fresh fruit!

💡 Tips & Customizations

🌿 Mix-ins: After making the batter, feel free to fold in chopped pecans, diced banana, or even chocolate chips.
🍯 Toppings: A stack of fluffy pancakes isn’t complete without toppings! I love pecans, banana slices, yogurt, and a drizzle of nut butter.
❄️ Freezer-Friendly: To freeze, place cooked pancakes on a baking sheet so they aren’t touching for 30 minutes, then move to a freezer-safe bag for up to 3 months. Microwave for 30-60 seconds to reheat.
